My last post


 
For our last assignment of the year, we had to for fill out an order for a customer which was actually a teacher who asked for a dessert. My teacher was Angela Klassen, who was really excited about the order, plus she is super nice. Her order included 16 chocolate cupcake filled with chocolate mousse, 16 lemon raspberry cupcake, that needed to be summer themed. I had a few idea prepared to our next meeting with the “customer”, where I had printed lots of different picture of cupcake with a summer theme. She decided to go with the fondant flowers and buttercream grass/flowers design. I had two days to prepare this dessert. My white velvet cupcake where nice and rounded, but when I baked my chocolate cupcakes they deflated and looked like elephants had trampled all over them. Those where NOT the cupcakes that I was going to present, so I had to start over and make another chocolate batter recipe. On my second try there turned out better than the previous once, and I wasn’t going to make a third batter, plus I was running out of time. In the end everything came together and worked out nicely. Really happy to have this experience with these amazing people and an awesome teacher, and lets not forget Mrs. Russel who always kept the day in the bakeshop interesting and lots of fun. Totally going to miss this class.

Last Week In the Bakeshop :(


I can’t believe how fast this semester went!!! It feels like it should have just started. I like having classes that I love coming to school for; this is definitely one of those classes! I love coming to school for this class, doing something I love doing every single day. The two semesters I’ve spent in the bakeshop are definitely something I’m gonna remember forever. And the people I’ve had the privilege of working with and getting close to is something I’ll always remember. The teacher is great, as well as the educational assistant and all my classmates!

              Well, today we were given an assignment that kind of scared us all a little bit. We have all worked with customers, making sure everything is made, but we have never worked on it ourselves. Our chef usually handles the customer while we make the product..... Well, this is different. We were given a random teacher from Northlands Parkway Collegiate who was going to order a desert through us. We have to meet up with them, keep in contact with them through-out the rest of the week, and make a dessert that blows them away.

        I can handle making a dessert, but having to talk to a teacher is definitely not going to be my most favorite thing :|

          But all that aside, we only have 6.5 days before our exam and clean up!! I am definitely excited to be able to have summer holidays and no school for 2 months, but I'm really going to miss this class. Wish it had a third level I could take!

Our bakeshop days are almost to an end



I can just feel every day getting shorter and shorter, time is flying by. I don’t even want to think about never actually baking in this school. This last few days we had to make a pastillage structure, I made a butterfly cut out and a lily pad flower. Today we had another black box mystery, were we have to use flax seeds, chocolate milk, molasses, salted peanuts, and black pepper. Our teacher gave us the choice to leave one ingredients out if we wanted to. I made a chocolate cupcake with chocolate mousse, finished with a peanut butter buttercream swirl. The ingredient that I left out was the black pepper seeds, because it wasn’t going to be a good combination with my other ingredients. Overall this day was exciting and lots of fun. I’m just trying to savour all the desserts and our last minutes before this semester ends.

VIP Lunch

Just over a month ago our chef asked us to create a dessert for a VIP lunch that was happening on that Friday. We had the morning to come up
with something, and in the afternoon we would be tasting them all and
deciding which one we wanted to make.
 It was supposed to be something that we didn't make everyday for the cafeteria and
finding something to make was no easy task. After pulling up Pinterest on a
computer, and looking around for some time, I finally found something that looked
like it would be fun to make.
They were chocolate cupcake liners with mousse inside. I went to work right away making them, and once everyone had finished there desserts, we lined them
all up and tried them. My dessert was the winner!
the following day we began our work making all of the desserts.
We thought that it would be easier to use silicone half-circle molds instead of using cupcake liners.
